A Simple Pancake Recipe
Over the years, I’ve explored making so many different types of pancakes, and for many, many years, it seemed that my go-to breakfast recipe became oat and banana pancakes. I’ve made oat, spinach and banana protein pancakes, and they were lovely! (Perhaps I’ll share this recipe another time :) )
Today however, we’re back to the beginning, to the basics, of a making a simple pancake recipe (with a little bit of a twist). I found the base of this recipe too on bbcgoodfood.com and then tweaked it a little along the way :)
Yield: 4
Prep + Cook time: about 1 hour
Ingredients:
200g plain flour
4 eggs
600 semi-skimmed milk
A dash of nutmeg
2 tbsp sunflower oil (for frying, PS I didn’t add any oil to the mix itself, only used oil to fry it)
A pinch of salt
Steps:
Add the flour and a pinch of salt into a large mixing bowl.
Add in the eggs, and pour in your milk gradually, while whisking well along the way.
Once all of the flour is incorporated, whisk well until you have a smooth mix / paste.
Heat the pan over a medium heat, and then grease the pan with some of the sunflower oil.
Pour in some batter into the pan (slowly, until just enough depending on the size of the pan), tilting the pan to slightly move the mix around for a thin and even layer.
Leave to fry without interrupting it for about 30 seconds to a minute (or even 1 min 30 seconds)—essentially, until the pancake is just about golden underneath and is ready to be trued—and then flip it over (just double check here that there are no folds as well), and the cook this side until it’s golden as well, before placing it onto a plate.
Contiue with the rest of the batter, until they’re all fried.
For each pancake, I ended up adding some honey, rolling it up, and when they were all rolled up, I sprinkled some icing / powdered sugar over them, a little bit more honey, and some cinnamon as well.
